Soak the apples in the boiling water to slightly soften. Chop the apples with lemon juice in a food processor. Stop before the apples reach the texture of applesauce.

Beat the egg whites. Fold in the spices and grissini. Fold in the apple mixture. Bake at 325 degrees until golden brown. Remove from oven and allow to sit for 1-2 minutes. Remove to a rack to cool completely.

2 T water
1 T apple cider vinegar

Directions

Spray a single serve springform pan with non-stick cooking spray and line with wax paper cut to fit the pan. Place a thin layer of dried apples in the bottom of the pan. Combine the water, and lemon juice in a small sauce pan. Add toffee and regular Stevia to taste. Bring to a boil. Add the remaining dried apples and simmer until the dried apples are softened but not completely re-constituted.

Strain the apples by placing in the cheesecloth. Press and twist to remove all the liquid. Return the liquid to the saucepan. Add the vinegar, bring to a simmer and reduce by ½. Taste and adjust amounts of Stevia (plain and toffee) to taste.

Top the dried apples in the springform pan with a with a small drizzle of the reduced sauce. Sprinkle with apple pie spice. Continuing layering in the softened apples, alternating with a little sauce and some spice. Reserve a small amount of sauce to drizzle over the baked apple pie.

Bake until the pie is bubbly the top lightly browned. Cool completely. Open the spring from pan. Use a cake server or off-set spatula to remove the wax paper and transfer the pie to a pretty dessert plate. Drizzle the plate and pie with the remaining reduction sauce. You may even want to mix a little apple spice with some Stevia and sprinkle over the top for a “powdered sugar” affect.

Place the juice in a baking tray and freeze until slushy. In a medium sized bowl, gently mix the slushy puree with the sparkling water. Return to the tray and freeze. Allow to freeze for tradition sorbet.

If you prefer, make a Granita. Using a large table fork, scrap the top of the puree every 15-20 minutes. Let the strawberry flakes pile up at either end of the baking pan. Continue until all of the puree is frozen and flaked. This makes a very light dessert with a lot of flavor that seems to burst on the tongue as it melts.

Cut or scoop into a serving dish. Top with 1 small strawberry and a dusting of cocoa powder for additional taste and appeal.

You may find that a piece of cheesecloth substitutes well for a large mesh strainer. With the strainer you can mash through more of the nutritious pulp. The resulting fiber in the dessert is a serious plus.
