100 grams ground beef, at least 93% lean
½ c water
1 T red wine vinegar
1 t Worcestershire sauce
½ t Cumin, whole seeds
1 Allspice berry, cracked
½ t Sea Salt (or kosher)
½ chipotle powder (or more to your heat preference)
1 Mexican onion or small shallot, diced
2 cloves garlic, minced
1 small Tomatillo peeled and chopped
1 small Tomato, chopped
Fresh cilantro, de-stemmed and rough-chopped
Start with a non-stick sauté pan and heat to medium. Add the cumin seeds and the allspice, toast until fragrant and seeds just being to snap in the pan. Immediately pour into a mortal and pestle with the salt. Grind together. Set aside to cool.
Reduce the heat in the pan slightly and add the ground beef. Cook until no pink remains and cool on a paper towel to drain. Add the onion to the pan and a little water to sweat the onions, keeping the ½ cup of water for later. Add the garlic; do not allow to burn. Once the onions are nearly cooked, add ½ c water and the Worcestershire sauce to de-glaze the pan. Add all of the spices to the water.
Add the Tomatillo to the water and cook until soft. Now return the beef to the pan and add the tomato. Cook until warm and combined. Serve topped with fresh cilantro.
Allspice is one of the few flavors native to North America. In fact, it’s one of the things Spanish conquerors took back to Europe when they went home. Outstanding chili recipes always have just a bit of sweet in them. You can always add a little sweetener if you want your chili sweeter, and in in the hCG diet chili recipe, the Allspice recognizes the roots of the recipe and adds an expected note to the flavor.
