hCG Diet Recipes: Caramel Apple Pie

As is often the case, technique makes a huge difference when you want to eat well, loose weight and amp up the flavor on a dish. Many of the more complicated techniques in cooking and baking were developed due to problems with ingredients—the most common problem was supply. The feast or famine syndrome resulting in creative ways to use up a lot of product or stretch things until the next crop was available.

Fruit dishes that are layered and baked have a long-standing tradition. And just like heavy breads spikes with nuts and dried fruit, these creations served specific purposes. For hCG diet recipes these “old” tricks lead to great results.

Ingredients

8 ounces dried Apples, no sulfur or sugar added, rough-chopped
1 t Apple Pie spice
2 T water
1 T apple cider vinegar
1 T lemon juice
Toffee flavor Stevia
Stevia
Cheesecloth

Directions

Spray a single serve springform pan with non-stick cooking spray and line with wax paper cut to fit the pan. Place a thin layer of dried apples in the bottom of the pan. Combine the water, and lemon juice in a small sauce pan. Add toffee and regular Stevia to taste. Bring to a boil. Add the remaining dried apples and simmer until the dried apples are softened but not completely re-constituted.

Strain the apples by placing in the cheesecloth. Press and twist to remove all the liquid. Return the liquid to the saucepan. Add the vinegar, bring to a simmer and reduce by ½. Taste and adjust amounts of Stevia (plain and toffee) to taste.

Top the dried apples in the springform pan with a with a small drizzle of the reduced sauce. Sprinkle with apple pie spice. Continuing layering in the softened apples, alternating with a little sauce and some spice. Reserve a small amount of sauce to drizzle over the baked apple pie.

Bake until the pie is bubbly the top lightly browned. Cool completely. Open the spring from pan. Use a cake server or off-set spatula to remove the wax paper and transfer the pie to a pretty dessert plate. Drizzle the plate and pie with the remaining reduction sauce. You may even want to mix a little apple spice with some Stevia and sprinkle over the top for a “powdered sugar” affect.
