hCG Diet Recipes: Chinese Chicken Salad
Chinese Chicken Salad, which is actually a very American recipe, is typically served with crunchy noodles. This recipe has been adapted to be satisfying, fairly traditional, and acceptable as an hCG diet chicken recipe.
½ pkg Shirataki Konjac noodles
100 grams chicken
1 c shredded Napa cabbage
1 T ground peanuts
1 t sesame seeds
1 t soy sauce
1 T rice wine vinegar
1 pkg approved sweetener
1 stalk celery, diced
¼ c sliced water chestnuts
2 T shredded carrots
2 T diced green pepper
1 t peeled and finely diced ginger
Pinch of chicken bullion granules
Directions
Prepare the noodles first: Take the noodles, ½ of the package, and cook in boiling water for 5 minutes. Drain and set aside.
In a medium skillet brown the chicken. Remove chicken and set aside. Use the soy sauce and rice wine vinegar to deglaze the pan. Add the ginger and bullion granules. Remove from the heat and stir in the sweetener.
In a serving bowl, toss all the ingredients except the nuts with the dressing. Serve while the warm and cool temperatures both hold. The contrast of textures and temperatures is part of what makes this dish a pleasant hCG diet recipe. Sprinkle the nuts and seeds on top for added interest.
Napa cabbage is a nice change from tradition cabbage or greens. In addition, since Napa cabbage has a different flavor profile, it makes the dish a bit more exotic, Fortunately, this type of cabbage is still high in fiber and crunch.
You can of course use cider vinegar if you don’t have rice wine vinegar. Just be sure to reduce the amount by half. Cider vinegar has a much stronger taste and could overpower some of the delicate flavors in this dish. Many hCG diet recipes focus on strong flavors. Chinese Chicken Salad, by contract, is about the play of more refined tastes and textures.
