hCG Diet Recipes: High Protein Pancakes

Ingredients
2 T egg whites
1 T orange juice
¼ t vanilla
Pinch of cream of tarter
3 T approved sweetener
1 T Soy flour
2 T Oat flour
1 T Whey protein
1 T Whole wheat pastry flour
½ t Salt
1/2 t Cinnamon
Pinch, Ginger
Pinch, Nutmeg
Pinch, Cloves
Directions:
Combine the orange juice and vanilla. Set aside
In a small bowl, combine the dry ingredients. And then sift the dry combination ensuring everything is evenly distributed. If the color is not even through the mixture, sift again. Many people are tempted to skip this step. Don’t do it! Successful sifting determines the quality of your pancakes. Each of the dry ingredients has a different texture and moisture level so you have to help them combine evenly.
Beat the egg whites into stiff peaks. Use a chilled bowl large enough for all the ingredients. The beaters and the bowl must be completely clean. Even a tiny bit of fat or oil means the egg whites won’t whip up. Gently fold in half of the flour mixture. Add the wet mixture. Fold in the remaining dry ingredients, just distributing the flour through the beaten whites.
Cook on a heated griddle or sauté pan. Serve topped with chopped fruit.
