hCG Diet Recipes: Italian Vegetable Soup
Sometimes the best flavor in a dish comes from making more than one serving. When it comes to hCG diet recipes for Italian Vegetable Soup, you’ll get more taste by making at least 2 servings at a time. Of course, this also makes a meal time faster later in the week or at lunch with leftovers.
Italian Vegetable Soup
1/4 c Aspargus, sliced
1 c Broccoli florets, divided
1 Celery stalk, medium size, sliced
1 Tomato, medium chopped everything reserved
¼ t garlic powder
¼ t onion powder
½ t Oregano, dried
½ t Basil, dried
½ t Fennel
1 T Cider vinegar
2 cups broth
Liquid smoke (optional)
1 c Spinach
Fresh Basil, sliced fine
Directions:
In a saucepan combine the broth, vinegar and dried spices. Bring to a simmer and cook for 3 minutes. Add the vegetables, except the spinach, and simmer until all are tender-crisp. Add Liquid smoke to taste, though start with perhaps three drops if you miss the meatiness of a more traditional soup over this hCG diet recipe.
In a soup bowl, place ½ of the spinach. Pour one serving of the soup over the spinach. Reserve the rest to cool and use for another meal. Top with some fresh basil strips. Serve with 1 grissini and sparkling mineral water.
When that next meal comes along, just reheat the soup in the microwave and serve the same way. Many people prefer this soup on the second day as the herbs have time to blend. You could even on the second day drain off the liquid and use as poaching liquid for fish. Then place the fish on the spinach, add the heated vegetables and pour the broth over everything.
