hCG Diet Recipes: Lobster Salad

You’ve probably seen lobster salad in hCG diet recipes. Lobster is a great, satisfying protein. Sometimes however, if you’re doing to spend the extra money on lobster meat, it’s nice to jazz up your meal even more. That’s exactly what this recipe is all about.

This recipe is hCG diet approved and has an extra twist to keep things interesting. You plenty of crunch and something more exotic by adding in Thai flavors,. Your taste buds will be dancing. This version makes one serving, but it’s good enough to share with the whole family, so you might need to make more.

Makes 1 serving

Ingredients for hCG Thai Lobster:

The Dressing:

1 T lime juice
1 T rice wine vinegar instead
Pinch of chopped green onion
Pinch of Cayenne pepper (optional)
Small amount, pinch, of ground peanuts

The Salad:

100 grams lobster tail meat diced
¼ c sliced water chestnuts
1 t. fresh, chopped mint leaves
1 t. fresh, chopped thai basil leaves
Pinch of black sesame seeds (Optional)

Keep the salad ingredients chilled while mixing the dressing. Combine all of the dressing ingredients. Make sure everything is well combined. The remaining ingredients, the lobster and fresh herbs, are very delicate. Be sure you avoid over-mixing by caring for the dressing first. Once the dressing is well combined, gently fold in the remaining ingredients.

Serve over a bed of greens such as mixed field greens or watercress. Decorate with a few black sesame seeds on top for extra appeal.

When you reach Phase 3, you can make a few hCG diet recipe modifications. Consider adding 1-2 T of all natural peanut butter to the dressing (hint: 15 seconds in the microwave will soften the peanut butter) and a dash or two of sesame oil to dressing for even more flavors. If you like it hot, dice up a bird chili and go for the heat!
