hCG Diet Recipes: Vegetable Salad

Herb Salad with Harrisa

Mint, chiffonade
Italian Parsley, leaves removed from stems
Chives, chopped
Basil, chiffonade
½ c Baby Arugula
1 c. Baby Spinach
1 Shallot, sliced fine
1 ½ c English cucumber slices
¼ c shredded carrots
1 Roma tomato, thinly sliced
¼ c Asian Pear, diced
Vinegar to taste
Zahtar to taste

Lay the greens on a plate. Toss the remaining vegetables and the Asian Pear together. Arrange on the greens. Dress with Vinegar and a sprinkling of Zahtar.

Also called Za’atar, this spice mixture is common Egypt, Israel and surrounding areas. The name has ancient Sumerian roots. A couple of the ingredients are not common in western cooking and provide an interesting counterpoint the salad.

One of the unique ingredients is hyssop. In some cases the entire mixture is called hyssop. Either way, it’s a taste indigenous to the area the flavors are borrowed from. Don’t be alarm, either, when you read the ingredient list on Zahtar. The mix does contain sumac. However, this is not the poisonous sumac found in most of the United States and other parts of North America.

The edible version of sumac has been used safely for centuries. Many chefs consider the taste a charming and unusual flavor. When you taste something hard to describe in the salad, you can be sure that’s the sumac. You may not have realized you can flavor-travel with hCG diet recipes.
